Recipe taken from Cuisine Paradise by Ellen Guan at http://ellenaguan.blogspot.sg/2012/12/pancakemisu-using-gold-kili-double-shot.html
It is really fast and easy. I made some changes to the recipe though and it tastes really good.
Serving Size: 6 Pancakes
Ingredients:
1. 100g cake flour
2. 1 teaspoon baking powder
3. 1 packet of nescafe white coffee (40g)
4. 2 tablespoon sugar
5. 70ml milk
6. 1 egg
7. 1 tablespoon olive oil
Steps:
1. Mix cake flour (sifted), baking powder, sugar and coffee powder till well combined in a bowl.
2. Whisk egg and milk in a spearate bowl.
3. Add in the liquid mixture into the dry ingredients and whisk.
4. Add in olive oil into the mixture and mix.
(Do not overmix!)
5. Heat the frying pan with some butter and pour a scoop of batter on it. Cook till bubbles appear and flip!
6. Sift cocoa powder on pancakes.
7. Serve with cream cheese, ice cream and fruits. (Optional)
8. Enjoy!
